1.Heat the oil in a large saucepan over medium heat until hot. Add the beef, and
cook, stirring constantly until evenly browned. Transfer to a plate.
2.Add 1/2 cup coconut cream to pan. Cook over medium heat for about 20 seconds or
until hot. Add massaman curry paste. And Cook for 1 minute or until aromatic.
3.Return beef and juices to the pan of curry paste, add beef stock, peanuts, potatoes,
sugar, tamarind concentrate, fish sauce and remaining coconut cream and coconut
milk. Stir to combine.
4.Reduce the heat to low. Cover and simmer, stirring occasionally, until beef is tender
or 30- 60 minutes. Serve with jasmine rice.
