Massaman Beef Curry

2 tablespoons vegetable oil
650g gravy beef or chuck steak, trimmed
1 cup coconut cream
2 tablespoons massaman curry paste
1 cup coconut milk
1 cube chicken or beef stock
1 tablespoon soy sauce
1 tablespoon oyster sauce
1/2 cup unsalted roasted peanuts
2 medium potatoes, peeled, cut into 3cm pieces
2 tablespoons palm sugar
1 tablespoon tamarind concentrate
1 tablespoon fish sauce
steamed jasmine rice, to serve

1.Heat the oil in a large saucepan over medium heat until hot. Add the beef, and
cook, stirring constantly until evenly browned. Transfer to a plate.

2.Add 1/2 cup coconut cream to pan. Cook over medium heat for about 20 seconds or
until hot. Add massaman curry paste. And Cook for 1 minute or until aromatic.

3.Return beef and juices to the pan of curry paste, add beef stock, peanuts, potatoes,
sugar, tamarind concentrate, fish sauce and remaining coconut cream and coconut
milk. Stir to combine.

4.Reduce the heat to low. Cover and simmer, stirring occasionally, until beef is tender
or 30- 60 minutes. Serve with jasmine rice.

Massaman Curry

has a favorite Thai restaurant but give it go who knows you might cook better.  In southern Thailand it is thicker  and like all massaman recipes a better results if cook over a long time and has a nicer flavored
